Black garlic (fermented black garlic) is a functional food made from fresh garlic by constant temperature and humidity box fermentation process for 60 to 90 days. In the process of its production, garlic undergoes non-enzymatic Browning reaction in a closed environment, which not only completely retains the active ingredients such as alliin and sulfide, but also makes the polyphenols and antioxidant capacity increase exponentially. The fermentation process converts the original protein of garlic into 18 kinds of essential amino acids easily absorbed by the human body, forming a natural complex nutrient with immune regulation and anti-fatigue effects.
