Main Ingredients
The major structural elements of Gelatin Powder are completely composed of a complex mass of water-soluble, high-molecular-weight polypeptides and proteins that are directly obtained from the thermal breakdown of native collagen fibrils. The most important and abundant constituent is a special sequence of amino acids in which about one-third of the total amino acid content is made up of glycine, with very high levels of proline and hydroxyproline. The foundational rheological properties and the characteristic conformational properties (helices) of the biomaterial are determined by these specific amino acid residues, which are repeated in a characteristic tripeptide pattern. These are associated with the major structural proteins, and also include minor, highly refined fractions of other amino acids (alanine, glutamic acid, arginine), tightly bound residual moisture, and strictly from the source raw materials the trace ash elements. Among this complex biochemical matrix, there are no synthetic additives, preservatives, or active pharmacological compounds, and the functional efficacy is driven solely by the dynamic interaction of the polymeric proteins with the aqueous environment, which leads to gelation, emulsification, and film formation. Manufacturing Pathway
1. Raw Material Preparation and Sorting:
The first step in the production of the industrial product is the careful selection and mechanical sorting of raw materials of a high degree of purity, whether bovine or porcine, mainly skins and demineralized bones (ossein), before entering the process of washing and leaching to remove all traces of impurities and foreign matter.
2. Pre-Treatment (Acid or Alkaline Conditioning):
For animal skins, the prepared tissues are then subjected to a critical chemical conditioning stage, usually with dilute acids for pork skins or prolonged lime (alkaline) treatment for bovine ossein, to carefully break down non-collagenous animal tissue and swell the animal collagen without prematurely dissolving.
3. Multi-Stage Water Extraction (Cooking):
The raw materials are then subjected to hot water treatment in a sequence of temperature-controlled washes to open up the collagen, followed by controlled thermal hydrolysis and conversion into a liquid extract of gelatin.
4. Filtration and Clarification:
The raw liquid extract undergoes a series of filtration and centrifugation processes to capture suspended fats, fine particulate matter, and trace insolubles, resulting in high optical clarity and purity of the final solution.
5. Concentration and Evaporation:
The liquid is then clarified and processed in industrial vacuum evaporators to efficiently remove excess water under reduced temperature for optimal solid protein content in the liquid for subsequent drying.
6. Sterilization and Gel Chilling:
The concentrated gelatin solution is then subjected to high-temperature short-time (HTST) pasteurization or sterilization to make it microbiologically safe and is immediately chilled to become a firm, uniform gel sheet or noodle.
7. Drying, Milling, and Blending:
